Mexican Christmas Cookies: Bizcochitos-Biscochos

Bizcochitos-Biscochos

2 cups lard
1 cup sugar
1 teaspoon anise seeds
2 eggs
6 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup orange juice (can use water, white wine or dry sherry)
1 cup sugar
1-2 teaspoons cinnamon

Preheat oven to 350°.  Cream lard thoroughly. Add 1 cup sugar and anise seed and mix. Add eggs and beat until fluffy.  Sift flour, baking powder and salt together. Add to lard mixture and mix well. Add orange juice and knead until well mixed.  Roll to 1/4 inch on lightly floured board and cut in fancy shapes. Or place in cookie press using desired shapes. Bake for 8-10 minutes, just until lightly browned.

Mix 1 cup sugar and cinnamon in bowl.  After taking cookies out of oven, while still hot, place in sugar/cinnamon mixture and gently coat.  Shake off excess and place on cooling rack.

These cookies absolutely melt in your mouth and are a Christmas tradition in New Mexico.
