“While I have many favorite recipes, this casserole is quick, easy and delicious. Toss in a touch of Southern with the inclusion of cornbread and it’s a winner at my house,” said Lisa Hobbs.
Chili Hot Dog Casserole
One box of cornbread muffin mix (I use Jiffy 8.5 ounce)
One package hot dogs (I use Hebrew National Beef Franks)
One can chili (I use Campbell’s Chunky with beans)
Shredded cheddar cheese
Directions: Preheat oven to 400 degrees. Prepare cornbread as directed on package. Spread into the bottom of 8 inch by 8 inch greased pan. Cut hotdogs in bite-sized pieces. Mix chili and hotdogs in a bowl. Spoon over cornbread batter (do not mix). Top with cheese, as desired. Bake 20 minutes. Let stand three minutes before serving. Suggested toppings: cheese, sour cream, or mustard.
